hand. Fold husks back into place, and place the ears of corn in a large bowl of cold water with 1 tablespoon of salt for 10 minutes. Remove corn from water and shake off excess. Place the corn on the grill, close the cover and grill for 15 to 20 minutes, turning every 5 minutes, or until kernels are tender when pierced with a paring knife. Remove the husks and eat on the cob or remove the kernels.
Using a grilling rack, prepare some yummy red skin potatoes (again from that local farmers’ market) with onions. Slice the potatoes into medallions and brush with olive oil. Top each with a thick slice of onion. Season with salt and pepper. Grill on medium high and rotate frequently until tender – about 20 minutes.
With the grill still on medium-high, start the pork loin, ideally sourced from one of the area farms. Slice it into medallions, and rub with your own special combination of spices, or use this one: 1⁄2 c. paprika, 1⁄2 chili power, 1⁄4 c. brown sugar, 1⁄4 c. white sugar, 2 t. celery seed, 2 t. coarse ground black pepper, 2 t. cayenne pepper, 1 t. salt, 2 t.
garlic powder, 1 t. cumin. Heat up the grill and char to medium well done.
Add a tossed salad of local and fresh seasonal g r e e n s , cucumbers, tomatoes and top with your favorite
dressing.
The wines of choice for your game day feast: Cabernet Franc: one of the ‘classic’ varietals
is lighter than Cab Sauvignon, usually with translucent red coloring, a peppery perfume and aromas of tobacco, raspberry and violets.
Pinot Noir: Its name comes from the French words for pine and black and is grown around the world in cooler climates. As a young wine, it will show aromas of cherries, raspberries and strawberries but it can, in certain vintage years, age well.
A Merlot: Often referred to as the ‘lighter side of red,’ this varietal goes beautifully with pork loin, especially for those who do not enjoy the more robust Cabernets.
A semi-sweet red blend: The delightful ‘grapy’ aromas and tastes of our native concords and catawbas, usually made in a semi sweet style, make these blends some of the most popular sellers in every winery in our region.
A fun to enjoy bubbly: Several local wineries produce lovely sparkling wines, some white, some rose’, some raspberry. Each would provide a festive touch to your event.
And of course, consider the ever popular Pink Catawba, the soft and sweet wine, which for years served as the historic foundation of the Shores and Islands industry.....Probably some of the best catawba in the country is produced every
