Yummy Tailgating Recipes

Football season is upon us. College games and the pro season are both here. If you are planning to meet old friends for the Homecoming game, setting up in a parking lot outside a NFL stadium or just turning the big screen TV toward the patio so you can watch a game from your back deck, it might be the time to set aside the six packs and plan a local food feast that features the wines from our own Lake Erie region.
Here are a couple of recipes and wine pairings to use for your game day meal.
The evening before, prepare an apple chutney topping using apples from one of our local orchards and onions from a nearby farmers’ market. (The olive oil, cranberries, raisins and spices likely need to come from a local grocery store!)
1 tablespoon olive oil, 1 cup diced onion, 3 garlic cloves minced,
2 cups cranberries,
chopped coarsely, 2 each
large Golden Delicious
and Granny Smith apples,
peeled, cored, and cut
into 3/8 inch cubes, 1
cup light brown sugar,
1⁄4 cup golden raisins,
1⁄4 teaspoon all spice, 1⁄4
cinnamon, pinch each
of nutmeg and salt, 1 T.
cider vinegar. Heat oil
in medium saucepan over
medium-high heat, about
2 minutes. Add onion
with a pinch of salt and
cook until softened and beginning to brown,

about 5 minutes. Add garlic
and cook until fragrant, about
30 seconds. Add remaining
ingredients and cook, stirring
often until mixture releases moisture and is boiling, 4 minutes. Reduce the heat to low, cover and simmer for the next 20-25 minutes, stirring occasionally. Once apples have become tender remove from heat and allow to cool to room temperature. Set aside what you need for the grilled pork. The balance will keep in the refrigerator for up to 2 weeks.
Add fresh local sweet corn: allow approximately 30 minutes to prepare fresh local sweet corn on the grill. Heat the grill to medium. Pull the outer husks down the ear to the base. Strip away the silk from each ear of corn by
