Chef in the Spotlight
Chef Mark Hobart of The Shore House
By JD Noll, Feature Writer
When entrepreneurs David Bier and Dawson Foster decided to open another location in down- town Sandusky, they wanted something different. “I looked at this old condemned building a block away where I wanted to put my office, but then found out from the city that I could open anoth- er restaurant,” Bier says. Months later after ex- tensive renovation, it opened. Focusing on food with a Caribbean/Cuban flair, The Shore House Tavern serves up a variety of culinary offerings in a sleek, contemporary nautical setting. Wood- en floors meet brick walls tastefully covered with
nautical décor, along with a family owned 1967 Lyman boat transom, depicting the area’s boating heritage.
Chef Mark Hobart has been handling the culi- nary responsibilities since shortly after The Shore House opened 16 months ago and initially collab- orated with Bier. “But now, Mark is so creative, I let him run with his ideas,” Bier emphasizes. Chef Mark likes to describe his style as “new modern- ist cuisine” and looks to different famous chefs for ideas. “I pick different flavors and things not done before,” Mark says. He uses Polynesian in-
fluences from the Caribbean, Key West and Cuba and credits his mom for his cooking passion. Mark perfected his skills at vari- ous Sandusky locations prior to coming on board at The Shore House.
As a result, diners will see a number of fresh seafood dishes on the menu. Popular
