Generally certain types of wood work best with specific meats. Use sweeter, fruit woods such as cherry and apple for fish, chicken, pork or turkey. For red meats, smoke with hickory or mesquite. You can find these basic guidelines in the smokers manual or online but don’t be afraid to mix and match to create a flavor that’s all your own.
Regardless of which smoker fits your needs, with a little practice, the experience can be very rewarding. As for how-to, the internet is a great place to start. There you can find cook times, ideas for rubs, marinades, sauces and prepara- tions. One of the great things about smoking food is, you can use your imagination to develop your own flare.
Once you get going, you’ll find that smoking is much more than just a backyard cookout. Be aware, the aromas, anticipation and outstanding food could just make your backyard a popular hangout for family and friends.
