1 garlic clove, minced
1⁄4 cup bourbon
1 cup ketchup
1⁄4 cup water
3 tablespoons cider vinegar
3 tablespoons unsulfured molasses (not
blackstrap)
2 tablespoons dark steak sauce
1 tablespoon spicy brown mustard
1 teaspoon liquid smoke
1⁄2 teaspoon hot pepper sauce
8 slices bacon
11⁄2 pounds ground chuck (80 percent lean) 1 teaspoon kosher salt
