Chef in the Spotlight Hooligans’ Marie Schroeder
“I love making people’s bellies happy.”

“In Ireland, it’s all about the “craic”, stated my long-time friend Patti Hill, as we sat down to lunch recently. She had just returned from yet another trip to the Emerald Green Isle. While searching for photos on her Smartphone, Patti defined “craic” as fun, music, lively conversation, great food and drink. She quickly produced photos of cozy pubs throughout Ireland, their patrons immersed in another world of warmth, laughter, folk tunes, stout Guinness and hearty comfort food. It didn’t take long for me to get the concept of “craic”, and to wish there was more of it in our world.
Fortunately, an Atlantic crossing is not nec- essary for those of us along the lakeshore who seek a perfectly pulled pint, good food and a bit of “craic”. Hooligans Pub at Put-in-Bay offers genuine Irish culture, hospitality and tradition with a touch of modern flair. The pub’s kitch-
en is in the hands of its culinary artist of over 11 years—Chef Marie Schroeder. Her delicious mouthwatering selections are a blend of tradi- tional Irish and American favorites...and then... well, then there are her desserts. Bailey’s Irish Cream cheesecakes, homemade apple crisp sun- daes, blueberry dream cakes, Neapolitan crullers and more...this array of sweet lusciousness is truly Hooligans’ very own pot o’ gold.
“My favorite thing to do is to try to make a new dessert,” says Marie. “I love the challenge, and I have the freedom to create desserts for Hooligans so it’s really fun for me. I recently made what we call ‘blueberry dream cake’ with cream cheese,

Age: 53 Originally From: Illinois Family: Two daughters, Sophia age 20 and Elena age 16. Sophia is studying Bio- Chemistry at OSU, working at Hooligans as a server, and will be doing research at Stone Lab on PIB this summer. Elena is a barista at Topsy Turvey on PIB and will be going to medical college in Washington this fall. Pets: Oh boy...I have a sweet dog named Shola, a sun conure parrot “Bubbie”, 30 chickens (I sell eggs) and a huge fish tank. Favorite Film: I really like so many movies. Maybe Silence of the Lambs.
Favorite Book: I read any cookbook that comes my way.
