many a trip I’ll keep a few white perch if they’re of good size and fillet them. The first time I kept four and fried them with perch pieces. Since their shape was different, they were easy to spot, and my wife and I both had several. Not as tasty as perch (not much is), but good eating nonetheless.
These are simple recipes, and there are lots of more complex ones that involve wine, butter, real cream, various spices, and other goodies. But simple is good, and I personally recommend these.
