ly opened Slack House Historic Café, under the direction of acclaimed Chef Stacy Maple, is creating made-from- scratch nostalgic eats winter, spring, summer and fall.
“You can’t get the Slack House anywhere else!” empha- sizes Chef Stacy. “We have a small, simple but all-original menu...burgers, hearty soups, hand-cut fries and shakes.” When asked what dish coming out of the kitchen is the most popular, Chef Stacy targets The Slack House Burger, a hit with its caramelized onion and fig jam, garlic mayo and bacon on a pretzel bun.
Milkshake lovers of all ages will find themselves in Sweet Tooth Paradise at the Slack House. Chef Stacy’s signature Over-the-Top Shakes are towers of sugary good- ness and resemble a work of art. Boasting titles such as Caramel Apple Swirl, Oreo Overload and Let It Snow, the one-of-a-kind shakes are topped with what appears to be a week’s worth of desserts...cupcakes, cookies, candy, do- nuts, fruit, whipped cream...Chef Stacy fearlessly brings it on. “I love the challenge of creating new Over-the-Top Shakes each week!” she exclaims.
A graduate of Le Cordon Bleu, Chef Stacy’s degree in Culinary Arts has served her well in the world of gastron- omy. While serving as Executive Chef at Port Clinton’s Bistro 163, she took fresh, healthy cuisine to a new level,
regularly packing the eatery with jubilant, loyal custom- ers. In 2019 she became Director of Culinary Services at Lakeside, overseeing the dining room at Hotel Lakeside and most recently, the Slack House Historic Café. She has been welcomed with thunderous applause from the Lakeside community and surrounding areas. Daniel Rog- ers, Lakeside Chautauqua President and CEO, shares his enthusiasm for Chef Stacy having joined his team: “I’ve been honored to work alongside some phenomenal culinary artisans in my career. Stacy Maple is a brilliant culinary genius who, through her mastery, brings ordinary food to extraordinary delight.”
When asked to cite who has inspired her on her culi- nary journey, Chef Stacy offered, “My mother was my ear- liest inspiration. She owned and operated her own cake shop as a professional baker and cake decorator. The late Julia Child, also an alumna of Le Cordon Bleu, continues to inspire me. Like Julia, I entered culinary as a mature woman in my thirties, and experienced the stress of being a woman in a predominantly male occupation.”
Balancing career, family and self is often an ongoing challenge to many professionals, Chef Stacy included. She explains, “I love what I do, and I love being in the restau-
